The chef-owner was born in 1976 in Miyako-jo, Miyazaki Prefecture — a region renowned as one of Japan's premier cattle-raising areas. Growing up surrounded by cattle from childhood, this formative experience became the foundation of everything he creates today. He launched his culinary career in French cuisine at an Osaka hotel restaurant, then spent ten years as an owner in the prestigious Kitashinchi dining district before opening Kitan In in the historic Hozenji neighborhood. The result is a crystallization of the discerning eye cultivated in cattle country and the technical mastery gained from traversing both French and Japanese culinary traditions.

Matsusaka and Miyazaki Beef, Direct from Producers

Kitan In exclusively uses Matsusaka beef from Mie Prefecture and Miyazaki beef from the chef's homeland. The owner personally sources directly from the producers through direct relationships, ensuring each cut arrives in peak condition.
